Celebration of Valencian Gastronomy

If you thought Valencian food was just about paellas, think again, because now you can enjoy a very Valencian burger too!

To celebrate the Day of the Valencian Community, or Nou d'Octubre, on 9 October, top local chef, Ana Antequino, and the cooking school, Mi Cub, have invented their own take on a juicy hamburger.

Instead of using a beef patty, the new Valencian burger showcases a figatell, a kind of traditional local faggot, made with lean pork meat, pig's liver, pepper, cinnamon and nutmeg, as well as other wonderful fresh local ingredients.

After making the figatell with love by hand, the novel recipe then sandwiches it inside a fresh brioche bun with coriander allioli (a type of garlic mayonnaise), caramelised onions and tomato confit.

Simply scrumptious. Wrap your gnashers round that for a truly modern Valencian gastro-experience and have a Happy 9th of October!
